Andouille Chicken Sausage with Roasted Veggies & Crispy Potatoes

By: Breanna Molix-Scott  |  Posted: January 27, 2026

What’s better than a warm, hearty meal? Minimal dish cleanup. Honestly, it might be a tie.

Smoky, spicy andouille chicken sausage teams up with a vibrant vegetable medley and crispy, buttery golden potatoes to make a meal that feels far more impressive than the effort required. Whether you’re snowed in during the dead of winter, hosting a laid-back summer cookout, or just trying to survive a random Tuesday, this dish delivers big flavor with minimal fuss, and is sure to earn a repeat spot in your rotation.

Fresh Basil Pesto

By: Breanna Molix-Scott  |  Posted: May 30, 2021

There is nothing quite like the arrival of warm weather to bring my kitchen back to life. After months of waiting for fresh herbs, my countertop is finally home to a lush, fragrant pot of fresh basil. And you better believe the very first thing I made was a massive batch of fresh, vibrant classic basil p
esto!

While store-bought jars are fine in a pinch, nothing compares to the bright, punchy flavor of homemade. It’s incredibly versatile, gorgeous to look at, and comes together in under 10 minutes.

P-I-Z-Z-A!

A while back {like, a year and a half ago} I posted about homemade pizza dough, but never had the pizza I made to go along with it! Don't worry, I'm getting better at remembering to take pictures while I cook!

Today's a treat, because I have not one, not two, but 3 different pizzas made using this DELICIOUS dough. Although, only 1 of them is detailed. The others are pictures I managed to take after pulling them out of the oven on family pizza night.

Here's The Tea ...

This post may get a little TMI for some of you ... so that's your heads up!

Spinach Pesto

By: Breanna Molix-Scott  |  Posted: March 13, 2017

I cannot wait for the weather to warm up so I can have fresh, fragrant basil back in my kitchen. It has been far too long without homemade margherita pizza and fresh pesto! To get me through this basil dry spell, I’ve been experimenting with other greens to find a worthy substitute.

Apple Pie Parfait

I can't even remember what I was looking up when I came across this little gem from Claire at A little Clairefication. It looked so. GOOD! So I thought I'd give it a whirl. And I'm glad I did. This was definitely an easy dessert that was satisfying. As someone who loves apple pie, this is the prefect dessert year-round.

Zucchini and Squash Chips!

By: Breanna Molix-Scott  |  Posted: February 9, 2016

If you have been following along lately, you know I’ve been on a mission to work through a surplus of fresh produce. One of my favorite ways to transform delicious squash into a crowd-pleasing snack, especially for a Super Bowl Sunday spread, is by turning them into savory, golden chips.

In the past, I usually opted for roasting my zucchini and squash with a simple toss of Weber’s seasoning and olive oil. Why? Because getting a breaded coating to actually adhere to the high-moisture surface of a squash can be a structural challenge! However, with a few technique adjustments, I’ve found a way to make that breading stay put for a satisfying, durable crunch.

Pizza Bites!

A couple of weeks ago I went grocery shopping. I'm not sure why considering I knew I was going to spend most of my time at school with no time to cook! Yesterday I remembered all this produce I had that needed to get cooked and eaten ASAP before it went bad! I love making French bread and pizza dough and had all these veggies ... so pizza bites it was! and they were gooooooood.

Homemade Pizza Dough!

Being single and having virtually no one to cook for means either having to adapt a recipe, eat the same time for an entire week unless you let it go bad, or just make your own version from scratch. I prefer to make my own from scratch. And that's exactly what I choose to do when it comes to things like pizza! Here's my recipe for homemade pizza dough!

Happy Holidays!

Happy Holidays, everyone! Last week I made some dyed eggs and I've been dye-ing to post the pics! I already think my deviled eggs are the most delicious eggs I've ever had (not that I'm bias or anything), but dying them made them super cute!

Pumpkin Pie in a Bag

The week of Thanksgiving is alwasy one of the longest weeks ... even though it's only 2 days long! We spend a lot of time finishing work, playing in centers, playing games and doing little Thanksgiving crafts. The day before Thanksgiving break, about half of our grade level has a Thanksgiving dinner in their classroom. Since I know it's that time of year when money gets tight, we skip the classroom dinner. This year, however, I decided to make pumpkin pie in a bag after seeing it on a couple different blogs. It went over so well with the kiddos!

Homemade Applesauce!

This week in class we are talking about Hanukkah, which starts Sunday. Every year we make latkes in class as we talk about this 8 day long holiday. And every year, I give the kids store bought applesauce to go with our latkes. Well, THIS year, since we have so many apples on our share table that can't leave the building, I decided we should make homemade applesauce! We gathered our apples and the kids help me wash, core and cut the apples before we put them into our crock pot to cook.

Ingredients:
16 apples
2 cups water
1 cup sugar
2 tsp cinnamon (optional)

Devilicious Eggs

One of the dishes I'm responsible for during the holidays is deviled eggs. I usually make a dozen and a half and that never seems to be enough! The good thing about deviled eggs is they don't take too long and they aren't hard to do. Here's my recipe for my Devilicious Eggs!

French Toast Casserole

Today was the first day back for the new staff in our district. One of the things our district's Texas Classroom Teachers Association does is make breakfast for the new staff on their first day back. I'm not gonna lie, it's one of my favorite days because there are sooooooo many good dishes that line the table! For the past 3 years I have made french toast casserole. This year I changed the recipe I use and I think I'm going to stick with it! I cook my eyeballing it, so bear with me on some of the measurements. Playing around with ingredients is one of my favorite things as far as cooking is concerned! :)

This is the recipe for french toast casserole, but I use pretty close to the same egg mixture when I make regular french toast.
